6 Delicious Ways to Eat Oats

Oats are such a wonderful ingredient.

Like many other grains, oats can be used in various recipes.


The most popular and famous oat dish is.... “Oatmeal”!

Some people want to try oatmeal because it is highly nutritious, but they think oatmeal is bland and has a boring taste.


But do not worry!


In this post, I would like to share my 6 favorite recipes using oats.


All recipes are super delicious and very simple!

You can not only make oatmeal, but also make pancakes, granola, cookies,

and even fried rice with oats!

Here are my 6 yummy oat recipes!



1. Peanut Butter, Cinnamon and Honey Overnight Oatmeal

Peanut Butter, Cinnamon and Honey Overnight Oatmeal

Overnight oatmeal is the simplest and quickest healthy delicious breakfast!


This is my base version of overnight oatmeal. You may put any toppings like sliced bananas, berries or nuts on this oatmeal.


It’s a perfect balance of an aroma of cinnamon, a nutty taste of peanut butter and a delightful sweetness from honey.


Peanut butter and rolled oats have good amounts of protein and fat.


I recommend peanut butter brands that only use peanuts and salt.

Some peanut butter products use vegetable oil and other chemicals to make peanut butter easy to scoop and avoid oil separation.


However, oil separation is very natural!

You just have to mix the oil and peanut before you scoop.


Check the ingredients list on the back of the product before you buy peanut butter!


Remember, just peanuts and maybe salt!


Sweet and nutty overnight oatmeal recipe:

  • 1 Serving

  • Prep Time: 3 minutes / Resting Time: 3 hours / Total Time: 3 hours 3 minutes

Ingredients:

  • ½ cup old fashioned rolled oats,

  • ⅓ cup any kind of milk you like

  • 1 tablespoon of any kind of plain yogurt

  • 1 tablespoon peanut butter

  • 1 to 2 tablespoon of honey

  • A pinch of Cinnamon Powder

  1. Mix a half cup of rolled oats, a ⅓ cup of any kind of milk you prefer, and 1 tablespoon of yogurt.

  2. Mix well with a spoon and put it in the sealed container. (The oats will soak up the moisture, so give it a place to expand.)

  3. Place it in the refrigerator and wait at least 3 hours. I would like to do this procedure the night before I eat. *Double your resting hours if you are using extra thick rolled oats!*

  4. Place oatmeal from the refrigerator in a bowl.

  5. Put a pinch of cinnamon powder, 1 tablespoon of peanut butter and 1 or 2 tablespoon of honey.

  6. Mix well and Enjoy!


2. Apple Crumble with Rolled Oats

Apple Crumble with Rolled Oats

This recipe is very simple and easy yet delicious!


It’s a delicious sweet dessert and perfect with vanilla ice cream.


It is one pan recipe, I recommend using a cast iron skillet or oven friendly pan.

(If you don’t have oven but air fryer, you may need air fryer pan)


The quality of brown sugar is very important in this recipe.


Please find a moist and dark brown sugar for a rich flavor!


Apple Crumble with Rolled Oats Recipe:

  • 6 - 8 Serving

  • Prep Time: 5 mins / Cooking Time: 25 mins / Total: 30 mins

Ingredients:

  • Rolled Oats 100g

  • Unsalted Butter 180g (100g for crumble)

  • Dark Brown Sugar 100g (50g for crumble)

  • All Purpose Flour 100g

  • 2 Apples or 380g chopped apples

  • Cinnamon 3 tsp

  • Salt 2 pinches

  1. Preheat oven in 180°C or 355°F

  2. Rinse 2 apples and chop apples in a thinly bite size.

  3. First, let’s make oats crumble.

  4. Put 100g of butter in a low heated pan.

  5. Put 100g rolled oats, 50g brown sugar, and 100g flour.

  6. Stir well for 10 mins in very low heat until all ingredients look like golden crumble.

  7. Place the oat crumble in a bowl and let it cool.

  8. Put 80g butter in the same pan in a low heated pan.

  9. Put chopped apples, 50g brown sugar, 2 pinches of salt and 3 tsp cinnamon.

  10. Stir well in low heat for 10 mins.

  11. Oven: Put crumble on top of cooked apples and put the whole pan in the oven for 5 mins.

  12. Air Fryer: Place cooked apples in an air fryer pot, put oat crumble on top of the cooked apples and cook in the air fryer for 5 mins at 180°C.

  13. Serve warm and enjoy! (eat alone or eat with vanilla ice cream)

3. Oat Pancake

(Vegan option available!)

Oat Pancake

A healthy and nutty flavor pancake recipe.


I use ground rolled oats instead of whole rolled oats to increase the oat's nutty aroma.

You may also use oat flour.


I tried 3 times to make the best oat pancakes.


1. Oat flour 2 : Regular flour 1

- It was too dense and chunky because oats soak too much moisture.

2. Oat flour 1 : Regular flour 3

- Because I put too much flour compared to oat flour, it lacks the oat flavor.

3. Oat flour 1 : Regular flour 1

- 1:1 was perfect! I found a good balance of oat flavor and just the right texture!


I strongly recommend using butter to cook this recipe because it really enhances the taste of pancakes. (I recommend using coconut oil for similar effect for Vegans!)


You may put chopped bananas, berries or nuts for pancake toppings.


Maple Syrup is a MUST!

I like using dark maple syrup for a robust flavor.


Delicious Oat Pancakes Recipe:

  • 1 Serving (approx. 3 round pancakes)

  • Prep Time: 5 mins / Cooking Time: 20 mins / Total: 25 mins

Ingredients:

  • Ground Rolled Oats 50g or Oat flour 50g

  • All Purpose Flour 50g

  • Unsalted Butter 50g (For vegan: Coconut Oil)

  • Brown Sugar 20g

  • Milk 55ml (For vegan: Oat milk)

  • Greek Yogurt 35g (For vegan: Coconut yogurt)

  • 1 large egg (For vegan: 50g of ripe banana)

  • Maple Syrup

  • Pinch of salt

  1. If you have rolled oats, use a blender to grind until the texture is like flour. If you have oat flour, you don’t need a blender!

  2. In a bowl, add ground oats, flour, milk, yogurt, egg, sugar, and salt. (Vegans: Add ground oats, flour, oat milk, coconut yogurt, ripe banana, sugar, and salt!)

  3. Mix well and let it sit for at least 5mins. This is an important step because it will allow to bind wet and dry ingredients together. You may put the batter in the fridge for this step, if your room temperature is too high.

  4. Heat a lightly buttered pan in medium heat.

  5. Scoop the batter and cook until both sides turns to golden brown.

  6. Serve warm and enjoy with maple syrup! (add your favorite toppings!)

4. Pumpkin Seed, Pecan and Cranberry Granola

Pumpkin Seed, Pecan and cranberry granola

This is my favorite granola recipe.


The best thing about making homemade granola is...you can choose any nuts you like and adjust the amount of sweetness! (I love pumpkin seeds, pecans and cranberries!)


No Oven needed! This is a stove top recipe version :)


You may choose honey or maple syrup for this recipe. I used maple syrup this time.

I love adding dried cranberries but you may use raisins instead.


You may store granola in an airtight glass container for up to 7 days at cool room temperature.


This granola is perfect with yogurt!


Pumpkin seeds, Pecans, and Cranberries Granola Recipe:

  • 3 - 4 servings

  • Prep Time: 5 mins / Cooking Time: 15 mins / Total: 20 mins

Ingredients:

  • Old Fashioned Rolled Oats 150g

  • Vegetable oil 3 Tsp

  • Brown Sugar 30g

  • Pumpkin Seeds 80g

  • Pecans 80g

  • Dried Cranberry 50g

  • Maple Syrup 3 Tsp

  • Cinnamon 1 tsp (or 2 tsp for more cinnamon flavor)

  1. Add 2 Tsp of vegetable oil on a low heated pan.

  2. Add rolled oats on a pan and stir until the oats are slightly golden (about 5 to 8 mins).

  3. Add 1 Tsp of oil, brown sugar, and nuts (pumpkin seeds and pecans) and stir for about another 5 mins.

  4. Pour the mixture on a flat dish and add 3 Tsp of maple syrup (or honey) and mix well.

  5. Cool for 1 min.

  6. Add 1 tsp of cinnamon and cranberry and mix well.

  7. Enjoy granola with yogurt or just as it is for snack!

5. Oatmeal Mushroom Cream Soup

Oatmeal Mushroom Cream Soup

This is a hearty and healthy soup packed with protein with a thick creamy texture!


I recommend using brown button mushrooms for this recipe.


I used whole oats (groats) for this recipe but you can use steel cut oats or Scottish oats for reducing prep time.


Creamy Oatmeal Mushroom Soup Recipe:

  • 3-4 Serving

  • Prep Time: Groat = 3 hours, Steel cut = 2 hours, Scottish = 1 hour / Cooking Time: 30 mins

Ingredients:

  • Groats or Steel cut oats or Scottish oats 100g

  • Brown button mushroom 200g

  • Half onion or diced onion 200g

  • Heavy Cream 200ml

  • Unsalted Butter 40g

  • Dried Basil 1 tsp

  • Dried Parsley 1 tsp

  • Garlic Powder 1 tsp

  • Salt

  • Pepper

  1. Soak your oats in water (Groats 3hrs, Steel cut 2hrs, Scottish 1hr)

  2. Pour soaked oats and 250ml of water in a pot and boil for 15 mins in medium low heat

  3. Thinly slice mushrooms.

  4. Dice half of the onion.

  5. After 15 mins boil, Add butter, ⅔ of sliced mushrooms, diced onion, 1tsp dried basil, 1tsp garlic powder and pinch of salt.

  6. Sauté for 3 mins.

  7. Add 550ml of water in the same pot.

  8. Boil for 5 mins in medium heat.

  9. Use a blender or food processor, puree the mixture until it is smooth.

  10. Add remaining sliced mushroom in the puree and boil for 5 mins.

  11. Add salt to taste.

  12. Serve in a soup bowl. Add ground pepper and fresh or dried parsley. Enjoy!

6. Spicy Oat Vegetable Fried Rice

Spicy Oat Vegetable Fried Rice

Because groats (whole oat grains) have a great crunchy texture, I enjoy using groats when I make fried rice.


If you like slightly spicy fried rice, I recommend adding Lao Gan Ma’s peanut in chili oil. It has a nutty and spicy flavor.


You may add chicken, pork, shrimp, or tofu for this recipe.


Oyster sauce is MUST in this recipe because it brings savory umami and enhances the taste of fried rice.


I recommend Lee Kum Kee's oyster sauce.

There are many kinds of oyster sauce from Lee Kum Kee. For this recipe, I used red panda oyster sauce.


Spicy Oat Vegetable Fried Rice Recipe:

  • 2 Serving

  • Prep Time: 2 hours / Cooking Time: 35 mins / Total: 2 hours and 35 mins

Ingredients:

  • Whole Oats (Groats) 50g

  • White Rice 100g

  • Carrot 80g

  • Onion 100g

  • Zucchini 50g

  • Scallion 30g

  • 2 Garlic cloves

  • 3 Tsp Vegetable Oil (I recommend grape seed oil or sunflower oil)

  • 2 Tsp Lee Kum Kee oyster sauce

  • 1 Tsp Lao Gan Ma peanut in chili oil

  • Pepper

  • Sesame seeds (for garnish)

  1. Rinse Whole oats and white rice in cold water.

  2. Soak whole oats and white rice in water for 2 hours.

  3. Pour soaked oats and rice in a small pot and add two cups of water and boil.

  4. Once the water is boiled, cover the pot and lower heat to simmer for 20 mins.

  5. While waiting for the oat rice to be cooked, dice onion, carrot, zucchini and garlic cloves. Also chop scallion and garlic.

  6. Add oil on a medium heated pan.

  7. Add chopped garlic and stir for 1 min.

  8. Add diced onion, carrot, and zucchini and stir well for 5 mins.

  9. Add cooked oat rice, 2 Tsp of Lee Kum Kee oyster sauce and 1 Tsp of Lao Gan Ma peanut in chili oil and mix and stir well for 10 mins in high heat. (add more oil if needed)

  10. Turn off the heat and add chopped scallion and freshly ground pepper.

  11. Serve in a bowl and garnish with sesame seeds and enjoy!
